Love Beetroot ! Try the following recipes
Beetroot bittergourd stir fry
Beetroot, grated or finely chopped - 2 nos
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Dry red chillies - 2 nos
Sambar powder - 1/2 - 1tsp
Grated coconut- 3 tbsp
Salt as needed
Oil - 1 tbsp
Brinjal rasam, Radish Sambar/Mullangi Sambar, Nellikka pickle/amla pickle, curds, Lotus stem fry
Pressure cook beetroot with salt and 3 tbsp of water until one whistle. Do not overcook.
Heat oil in a pan. Splutter mustard seeds, Add urad dal and roast till light brown. Add dry red chillies, curry leaves, asafoetida and turmeric powder. Add cooked beetroot and stir well. Add sambar powder and grated coconut. Stir fry till all the water is dried out. Serve hot with rasam, sambar, and rice.
