Vazha pindi muthira thoran / Banana stem horse gram thoran/ healthy recipe

Banana stem is a rich source of fibre and helps in weight loss. Its high fibre content creates a feeling of satiation and hence, reduces the intake of food. It also helps ease constipation. Banana stem is rich in potassium and vitamin B6 just like the fruit. Vitamin B6 helps in production of haemoglobin and insulin. Again, it improves the ability of the body to fight infection. Potassium helps in the proper functioning of muscles, including the cardiac muscles. It also helps prevent high blood pressure, and maintain fluid balance within the body. Banana stem is said to be a diuretic and helps detoxify the body. It is used prevent and treat kidney stones.

Ingredients

Green lentils/Horsegram  - 3/4 cup

Banana stem/ Vazhapindi  - 4 cups

Grated coconut        -  1 cup

Dry red chillies         -  3 Nos

Cumin seeds            -  1/4 tsp

Pearl onions            -  4 Nos

Garlic                     -   3 Nos

Turmeric powder    - 1/4 tsp

Onion  chopped      -  1 small

Green chillies, chopped  - 3 nos

Mustard seeds          -  1 tsp

Curry leaves


Salt as needed

Coconut oil - 2 tbsp




























Method
Remove the outer skin of  banana stem. Cut it into circles and remove excess fibre with the fingers. Cut it into small cubes. Soak the banana stem cubes in buttermilk. Pressure cook banana stem with one cup of water and salt till 3 whistles. Keep them aside. Pressure cook lentils till 5 - 6 whistle. Keep them aside. Coarsely grind grated coconut, red chillies, pearl onions, cumin seeds, garlic and turmeric powder. Keep the ground paste aside.

Heat oil in a pan, splutter mustard seeds. Add chopped onion, green chillies and curry leaves. When onion turns light brown in colour, add ground paste and saute them well. Now add cooked banana stem. Mix well, then add cooked lentils. Check for salt and switch off the stove.
